Beetroot Veggie Burgers ft. Cosmic Cookware

This recipe has been on my to do list for awhile, I’m not actually the biggest fan of beetroot on its own but I adore the vibrant colour and health benefits attached.

Personally I have found hiding it in recipes to be most enjoyable, this recipe doesn’t exactly hide it.. more like highlights it, but they taste amazing! I love a veggie burger alternative and this one is a must try!

Cooking with my cosmo pan, is soo easy, I find I need less oil due to the amazing non stick coating. I usually never buy typical non stick pans due to the toxic nature, but this one is non toxic
being free of PTFEs!
It is suitable for gas, induction & electric stove tops and
is also oven save up to 230 degrees.

This mixture might be slightly loose (this will be dependant on the beetroot size), when adding to the pan, simply use a spatula to press the edges to keep that circular shape, being a non stick pan, this is super easy.

Vegetable Beetroot Burgers

A delicious homemade meal featuring real food ingredients, made quick, hassle free with cosmic cookware.
Top with your favourite toppings! I used smashed avo, onion and lettuce.

 
 

Servings: 2 (4-5 burgers)

Ingredients

2 (medium) Cooked Beetroots
1 x 400g can Brown Lentils
1 Garlic Clove, minced
½ Red Onion, diced
½ cup Pecans
1 tbsp Psyllium Husk
1 tsp Salt
Pinch Pepper
2 tsp Extra Virgin Olive Oil

Fillings
1 handful Lettuce Leaves
½ Avocado, mashed
½ Red Onion, sliced into rings

 
Beetroot Veggie Burgers
 

Method

1.     Blitz beetroots, lentils, garlic, red onion, pecans, psyllium husk, salt and pepper in a blender for around 10 seconds until combined (do not over mix or the mixture will become too mushy).

2.     Form into 4-5 burger patties.

3.     Heat oil in pan and add burgers, cook for 5-7minutes, flipping halfway.

4.     Serve with lettuce leaves, avocado and red onion


Cooking this recipe in this pan was seriously dreamy… non stick, easy clean up, what more could you ask for?
