Servings: 2
Ingredients
2 tsp Extra Virgin Olive Oil
½ Onion, thinly sliced
4 Broccolinis
1 Carrot, julienned
¼ cup Corn Kernels
2/3 cup Cooked Brown Rice
1/3 cup Cooked Quinoa
1 tsp Chia Seeds
Salt & Pepper, to taste
Marinade
2 x 150g Wild Salmon Fillets, skin on
¼ cup Honey
2 Garlic Cloves, minced
2 tbsp Tamari
1 tbsp Sriracha Sauce
1 tsp Sesame seeds
Method
1. Combine marinade ingredients in a shallow dish.
2. Place salmon in dish and marinade for at least 20 minutes.
3. Heat a medium frying pan on medium heat until pan is hot.
4. Add half the oil and allow to coat the pan.
5. Add to salmon to pan skin side down (set aside remaining marinade), allow to sear until lightly crisped, approximately three minutes on each side. Prior to taking off the heat add remaining marinade and allow to heat through, approximately one minute (any longer and the honey will likely burn).
6. Meanwhile, heat remaining oil in a separate small frying pan, add onion and cook until softened, approximately 2 minutes.
7. Add broccolini and cook until tender, approximately 3 minutes.
8. Add corn and carrot and cook until softened.
9. Combine brown rice, quinoa and chia seeds in a bowl. Divide between plates.
10. Top rice with cooked salmon and vegetables.
