Garlic Herb Roasted Veggies

Ever find yourself stuck with what veggies to have with your meal. Well I am here today to solve that problem with a super easy, super delicious garlic and herb roasted veggie recipe.

You can add this side dish to almost any of your main meals, or simply have it as a meal itself! This recipe is in collaboration with snackables featuring their mini carrots & green beans. Servings: As a side dish

Ingredients

2 Potatoes, cut into cubes

1 x 250g Packet Snackable Carrots

3 Garlic Cloves, minced

1 tsp Dried Basil

1 tsp Dried Oregano

½ tsp Dried Parsley 

¼ tsp Dried Onion

Sea Salt

Extra Virgin Olive Oil, drizzled

1 x Packet Snackable Beans

¼ cup Pecans

¼ cup Feta, crumbled 

Fresh Parsley, roughly chopped

 
 

Method

Preheat oven to 200 degrees and prepare a baking dish. 

  1. Place potatoes, carrots, garlic, dried basil, dried oregano, dried parsley, dried onion, sea salt in a bowl. Drizzle with olive oil and toss to coat vegetables. 

  2. Place in dish and bake for 20 minutes. 

  3. Add beans and pecans, cook for a further 10 minutes. 

  4. Serve with crumbled feta and fresh parsley.
