Creamy lemon Hommus Pasta

Creamy and zesty, this pasta is seriously delicious!
And sooo simple to make. As a recipe developer I am always mindful of simplicity when creating recipes, I too am a busy bee, so I know what it’s like at the end of the day when you just can’t be bothered cooking.
But, it’s important we avoid getting takeaway or making poor food
choices as much as possible!

Creamy Lemon Hommus Pasta
 

Servings: 2

Ingredients

250g Fettucine Pasta
1 tsp Extra Virgin Olive Oil
1 Garlic Clove, roughly chopped
1/3 cup SSS Foods Hommus - Coriander, Cumin & Chilli
1 Lemon, juiced
1 tsp Lemon Rind
1/3 cup Parsley, roughly chopped
Salt & Pepper, to taste
Parmesan Cheese or Nutritional Yeast, to serve

Method

1.     Cook pasta as per packet instructions.

2.     Heat oil in a large frying pan and add garlic, cook until fragrant approximately 3 minutes. Turn off the heat and add hommus, lemon juice and lemon rind. Stir through drained pasta and parsley.

3.     Serve and sprinkle parmesan on nutritional yeast.
