Chickpea Brownies
Okay this recipe was totally inspired by my all time
favourite chickpea cookies, and i’m actually in love!
Chickpeas are so versatile and if you have never baked with them,
then you must try this recipe! They are also incredibly nutrient dense
and a fantastic functional food.
Chickpeas are:
High in Plant Protein (necessary for the building blocks of the body)
Great source of Fibre (aiding digestion & gut health)
Plant source of Iron (necessary for red blood cell production)
Contain Vitamin C which can increase iron absorption (score!)
Enjoy these delish brownies guilt free!
Servings: 9
Ingredients
2 x 400g can Chickpeas, drained & rinsed (or 460g dried chickpeas soaked & cooked)
1 tbsp Nut Butter (I used Peanut Butter)
½ cup Sweetener (I used Coconut Sugar)
¼ cup Oat Flour (or blitzed oats into flour)
1/3 cup Unsweetened Plant Based Milk (I used Coconut)
2 tbsp Extra Virgin Coconut Oil, melted
2 tsp Vanilla Extract
1 tsp Baking Powder
½ cup Dark Choc Chips
Method
1. Preheat oven to 180 degrees.
2. Blend all ingredients together, except choc chips.
3. Fold in choc chips.
4. Add mixture to a lined/greased brownie tin.
5. Bake in oven for 10-12 mins and allow to cool for 5 minutes.
