BBQ Salmon Skewers with Yoghurt Parsley Sauce

BBQ Salmon Skewers with Yoghurt Parsley Sauce
 

Servings: 2

Ingredients

½ Lemon, juiced & rind
1 Garlic Clove, minced
½ tsp Chilli Powder
1 tsp Extra Virgin Olive Oil
2 Wild Salmon Fillets, cut into cubes

Salad
2 handfuls Mixed Lettuce Leaves
6 Cherry Tomatoes
1 Celery Stalk
¼ Red Onion, sliced

Sauce
1/3 cup Natural Yoghurt
1 tbsp Extra Virgin Olive Oil
½ Lemon, juiced & rind
2 tbsp Fresh Parsley, chopped

 
 

Method

  1. Combine lemon, garlic and chilli powder in a bowl. Coat salmon in mixture and skewer.

    2.     Heat oil on a medium frying pan or barbeque. Place skewers and cook until salmon is tender and lightly browned on each side.  

    3.     Meanwhile, combine sauce ingredients in a bowl and set aside.

    4.     Serve skewers topped with sauce alongside salad.
