Lemon & Coconut Bliss Balls

Lemon and coconut is a dream combo for me!
Bliss balls are a fantastic healthy snack option,
they are super easy to whip up at home and of
course are additive free.

These bliss balls are also nut free making them
a great lunch box addition for the kiddies!
In fact they are gluten free, dairy free, nut free
and refined sugar free!

 
Lemon & Coconut Bliss Balls
 

Servings: 12

Ingredients

4 Medjool Dates, pitted & chopped
1 cup Rolled Oats, blitzed into flour
1/3 cup Desiccated Coconut
½ Lemon, juiced & rind
2 tbsp Coconut Butter
1 tbsp Rice Malt Syrup

Method

1.     Pulse all ingredients together in a blender until combined (add more flour or water if necessary too dry or sticky, this will depend on the amount of lemon juiced used).

2.     Using a tablespoon scoop mixture and mould into balls with your hands.

3.     Store in fridge.

4.     Enjoy!
