Mackerel Fish Patties

Conscious consumerism is about buying sustainably with ethical intentions. I like to focus on natural resources that promote longevity for our health & the environment.
When it comes to fish I always opt for Wild & Sustainable, I source mine through Butcher Crowd.
Keep these conscious consumerism points in mind:
🌿Be deliberate and thoughtful with all your purchases. Taking a moment to think “is this something I really need/want or love & what are the effects of buying this?”.
🌿Don't chuck out what you already have, but simply replace items when necessary.
🌿Focus on quality not quantity. Buy nice or buy twice!
🌿Making do, holding out or saving up for purchases, produces a feeling of delayed gratification. This is much more enjoyable as opposed to instant gratification which just isn’t as special & difficult to be truly grateful for.

Ingredients
300g Wild Mackerel (sourced from Butcher Crowd)
2 tsp Wholegrain Mustard
¼ cup Fresh Parsley
2 Spring Onions
2 Garlic Cloves
½ tsp Salt
Pinch Pepper
1 Egg, whisked
½ Lemon, zest
½ Lemon, cut in wedges
¼ cup Almond Meal
1 tsp Extra Virgin Olive Oil
Salad:
2 Radish, thinly sliced
1 Cucumber, sliced
2 Spring Onions, finely sliced
½ cup Fresh Parsley Leaves
1 tbsp Sunflower Seeds
1 tbsp White Vinegar
Method
Blitz mackerel, mustard, parsley, spring onions, garlic, salt and pepper in a blender until combined. Use hands to form patties with mixture.
2. Add egg to a bowl and in a separate bowl add almond meal. Dip each pattie in egg and then coat with almond meal.
3. Heat oil in a frying pan on a medium heat.
4. Add patties and cook until golden and cooked through, approximately 3-4 minutes each side.
5. Meanwhile, combine salad ingredients in a bowl.
6. Serve fish patties alongside salad and lemon wedges.
