Cheeky Chickpea Chicken Burgers
These are my new favourites! I try eat gluten free as much as I can as it makes my digestion SO much better. Standard burger buns would leave my tummy in stitches..NOT fun.
So, I created these delicious protein packed chickpea flatbreads instead!
And wow, what a game changer!
Servings: 2 (4 Burgers)
Ingredients
Burgers
200g Chicken Mince (alternatively turkey mince)
½ cup Chickpeas
½ Onion, finely diced
1 Free Range Egg, whisked
1 tbsp Psyllium Husk
1 tsp Marjoram
½ tsp Salt
¼ tsp Pepper
1 tsp Extra Virgin Olive Oil
Chickpea Flatbread
1 cup Chickpea Flour
½ cup Buckwheat Flour
½ tsp Salt
¼ cup Water
2 tbsp Extra Virgin Olive Oil
+ 1 tsp Extra Virgin Olive Oil for cooking
1 tbsp Green Yoghurt
Salad + Sauce
As desired (I used spinach, carrot and tomato chutney)
Method
Chickpea Flatbread
1. Combine flours & salt in a bowl.
2. In a separate bowl, combine water, olive oil & yoghurt. Once mixed add to flour and use hands to form a dough.
3. Set aside for 15 minutes (perfect time to prepare the burgers).
4. Divide mixture into 8 equal portions, using a roller, roll mixture on top an oiled surface into circles 2mm thick.
5. Heat a frying pan with oil on a medium-low heat.
6. Place each flatbread in pan and cook until browned on each side approximately 3 minutes.
Burgers
1. Using your hands combine all burger ingredients except for oil in a bowl.
2. Divide mixture in to 4 portions and shape into burger patties.
3. Heat oil in a medium frying pan on a medium heat.
4. Add burger patties and cook for 8-10 minutes, flipping halfway.
5. Assemble burger between flatbread with your desired salad & sauce.
