Natural Chicken Satay Skewers

Ingredients
1 tsp Extra Virgin Coconut Oil
250g Free-Range Chicken Breast, cubed & skewered
Peanut Sauce
4 tbsp Peanut Butter (I prefer crunchy but smooth is fine)
3 tbsp Tamari
1/4 cup Water
1 Garlic Clove, minced
1 tsp Lemongrass, finely chopped
Juice of ½ a Lemon
½ a small Chilli, optional garnish
Salad
2 handfuls Mixed Lettuce Leaves
6 Cherry Tomatoes
1 Celery Stalk
¼ Red Onion, sliced
Dressing
2 tbsp Extra Virgin Olive Oil
1 tbsp Apple Cider Vinegar
Method
1. Blitz all peanut sauce ingredients except for chilli (if using) until combined. Set aside.
2. Heat oil on a small frying pan on a medium heat.
3. Place skewers on frying pan and cook until chicken is tender approximately 7-10 minutes, turning skewers regularly.
4. Reduce frying pan heat to low and pour in peanut sauce, heat for 30 seconds to 1 minute (if the pan is too hot, the sauce will burn).
5. Serve skewers topped with chilli alongside dressed salad.
