Crumbed Fish & Kale Chips
Crumbing your own fish is super easy & can easily be made gluten free too!
If you also want to keep it feeling light, why not try some healthy kale chips,
I like mine super crispy, so that they almost melt in your mouth!
It’s a big YES from me.
Servings: 2
Ingredients
2 stalks Kale, base of stalk removed & broken into large chip sizes
1 tbsp Extra Virgin Coconut Oil
1 Free-Range Egg, beaten
1/3 cup Almond Meal
2 x 150g Cod Fillets, skin on
Salt & Pepper, to taste
Method
1. Preheat oven to 180 degrees fan forced.
2. Evenly spread dry kale on an oven tray, drizzle with coconut oil & sprinkle with salt.
3. Bake for 8-10 minutes or until crisp (keep an eye on them, they can burn quickly!).
4. Place egg in small bowl and meal in a separate small bowl. Dip each fillet into egg and then into meal until coated.
5. Meanwhile, heat remaining oil in a medium frying pan on a medium heat.
6. Add crumbed fish and panfry until fish is cooked through, flip halfway during cooking, approximately 10 minutes.
