Natural Chicken Noodle Soup
There’s nothing quite like a cozy bowl of homemade soup.
You almost feel like all your problems are sorted after eating a nourishing bowl like this!
Our grandma’s were really on to something, chicken noodle soup is exactly the kind of meal you need when you’re sick.
Homemade Chicken Noodle Soup is full of vitamins and minerals from the veg, hydration from the broth, carbohydrates and satiety from the noodles and collagen & glutamine from the chicken and bone broth which supports the immune system and provides building blocks within the body.

Ingredients
2 tsp Extra Virgin Olive Oil
½ Leek, finely chopped
1 Garlic Clove, minced
1 Celery Stalk, chopped
1 Carrot, chopped
1 Zucchini, chopped
1 Litre Chicken Bone Broth
½ cup Sweet Potato, cubed
½ tsp Ground Ginger
½ tsp Ground Turmeric
½ tsp Oregano
Salt & Pepper, to taste
200 Free-Range Chicken Thigh
100g Rice Noodles
2 handfuls Spinach
Method
Heat half the amount of oil in a large saucepan on a medium heat.
Add leek, garlic, celery, carrot & zucchini to saucepan. Sauté until softened, approximately 5 minutes.
Add broth to saucepan. Bring to a boil and reduce to a simmer for 10 minutes.
Add sweet potato, ginger, turmeric, oregano & seasonings to saucepan. Continue to simmer for a further 15 minutes.
Meanwhile, heat remaining oil in a separate frying pan.
Add chicken to pan and cook until cooked through, approximately 5-7 minutes. Set aside & shred with two forks.
Add rice noodles to saucepan and simmer until cooked through, approximately 5 minutes.
Stir through shredded chicken & spinach and allow to spinach to wilt, approximately 2 minutes.
