Chickpea Cookies
This is the my ultimate go-to sweet treat recipe! It’s so simple, all you do is blend & bake. That’s if it even makes it to the oven…did I mention you can also eat the mixture as cookie dough. Um, Yum!!
Chickpeas are full of protein & fibre and a fantastic addition to the diet.
Servings: 16 Cookies
Ingredients
1 x 400g can Chickpeas, drained & rinsed (or 230g dried chickpeas soaked & cooked)
¼ cup Peanut Butter
¼ cup Sweetener (eg. Rice Malt Syrup, Coconut/Rapadura Sugar, Maple, Honey)
2 tbsp Extra Virgin Coconut Oil, melted
2 tsp Vanilla Extract
1 tsp Baking Powder
¼ cup Organic Dark Choc Chips or Cacao Nibs
Method
1. Preheat oven to 180 degrees conventional and prepare a baking tray.
2. Blend all ingredients together, except choc chips.
3. Fold in choc chips.
4. Spoonful mixture on to baking tray (feel free to play around with size, I like tablespoon dollops & also smaller for bite sized cookies).
5. Bake in oven for 10-12 mins.
6. Allow to cool on tray for a further 5 mins (leaving them on the tray allows them to cook a little bit more but still remain gooey).
