Choc Chip & Oat Loaf
This takes bread to a whole new level! I am so pleased at how this came out. The chocolate throughout gives that “oh my god” melting moment and the oats provide satiety and create a delicious texture.

Servings: 10 Slices
Ingredients
1 cup GF Rolled Oats
1 cup Almond Flour
½ cup Dark Chocolate Chips
3 tbsp Sweetener (I used Coconut Sugar)
2 tbsp Psyllium Husk
2 tsp Baking Powder
½ tsp Cinnamon
4 Free-Range Eggs
1/3 cup Extra Virgin Coconut Oil
1 tsp Vanilla Extract
Method
1. Preheat oven to 180 degrees fan forced.
2. Combine the dry ingredients in a bowl (oats, almond flour, choc chips, sweetener, psyllium, baking powder and cinnamon).
3. Whisk eggs in a separate bowl and then add remaining ingredients (oil and vanilla) and combine.
4. Stir the wet ingredients into the dry mixture and combine.
5. Pour into a greased loaf tin and sprinkle with additional oats and choc chips (optional).
6. Bake for 30 minutes, or until browned and a skewer comes out clean.
