Fudgey Muffins

I'll be honest I love a good muffin! I developed this recipe two years ago and still make them all the time. ⁠

Just like my blondies I shared last week, they are also full
of protein as the base ingredient is actually..⁠
wait for it..⁠
...⁠
Beans!

Fudgey Muffins
 

Servings: 6 Muffins

Ingredients

1 x 400g can Cannellini Beans, drained, rinsed & 
pat dried on paper towel 
3 tbsp Honey
1 Free-Range Egg
1 small Banana
½ cup Quinoa Flakes 
¼ cup Almond Butter 
1 tsp Baking Powder 
1 tsp Vanilla Extract
¼ tsp Salt

Topping
¼ cup Chocolate Chips, melted

 
Canellini Bean Muffins
 

Method

  1.  Preheat oven to 180 degrees fan forced.  

  2. Add all ingredients to blender in the order as listed. 

  3. Divide mixture into muffin pans. 

  4. Bake for 20 minutes or until browned.   

  5. Drizzle with chocolate and enjoy!
