Homemade GF Potato Cakes
Ditch store bought and make your own!
These crispy potato cakes are such a delicious snack. They can also be turned into a nourishing meal by adding some fish and salad.
Servings: 14 Potato Cakes
Ingredients
4 medium Potatoes, peeled & diced
1 cup GF Oat Flour
1 Free-Range Egg, whisked
1 cup Plant Based Milk (I used Unsweetened Almond Milk)
1 tsp Garlic Powder
1 tsp Onion Powder
½ tsp Salt
Pinch of Pepper
1 tbsp Extra Virgin Olive Oil (additional as required)
Method
1. Boil potatoes in a large saucepan until completely softened.
2. Meanwhile add remaining ingredients except oil to a large bowl.
3. Once potatoes are soft, mash until smooth in the saucepan and allow to slightly cool.
4. Add mashed potato to bowl and combine.
5. Heat oil in a large frying pan on medium heat.
6. Add mixture to pan in your desired size (two tablespoons works well), and pat down with the back of the spoon to flatten out.
7. Cook until golden, approximately 3-4 minutes each side.
8. Continue the process until all the batter is used (adding additional oil as needed).
9. Pat dry with paper towel if required and serve with your favourite condiments (fresh tomato relish is delicious!).
