Sesame Chicken Asian Salad

Ingredients

Sesame Chicken
Extra Virgin Olive Oil, drizzled
300g Free-Range Chicken Breast, cut into strips
1 tbsp Tapioca Flour
1 tsp Garlic Powder
1 tsp Paprika
Pinch Salt
Pinch Pepper
2 tbsp Honey
2 tsp Sesame Seeds 

Salad
150g Vermicelli Noodles
1 Carrot, grated
½ Cucumber, peeled into ribbons
1/8 Red Cabbage, shredded
½ Lime, zest
½ cup Coriander, finely chopped
½ cup Edamame Beans

Quick Peanut Dressing
1/3 cup Peanuts
½ Lime, juiced
3 tbsp Sesame Oil
¼ tsp Chilli Flakes, optional

Optional Garnishes
Crushed Peanuts, sprinkled

 
 

Method

1.     Blitz Quick Peanut Dressing ingredients in a blender until combined and set aside.

2.     Cook vermicelli noodles as per packet instructions and set aside.

3.     Combine tapioca flour, garlic powder, paprika, salt and pepper in a bowl. Add honey to a separate bowl and sesame seeds to another bowl.

4.     Coat chicken in flour mixture, dip into honey and then coat with sesame seeds.

5.     Heat a frying pan and drizzle with olive oil Add sesame chicken and cook until cooked through, ensuring to flip halfway.

6.     Combine cooked vermicelli noodles, carrot, cucumber, red cabbage, lime zest, coriander and edamame beans in a large salad bowl.

7.     Top with chicken and drizzle dressing. Sprinkle crushed peanuts.
