Lemon Feta, Pea & Zucchini Ribbon Toast

Whipped Lemon feta is citrus heaven. Topped with healthy greens, you’re going to love the simplicity of this recipe.

Ingredients

2 tbsp Feta
¼ Lemon, juice & zest
2 slices Sourdough Bread, toasted
½ cup Peas, cooked
1 Zucchini, peeled into ribbons
Fresh Herbs (I used Basil)
Sea Salt & Black Pepper, to taste

 
 

Method

1.     In a small food processer, whip feta and lemon juice until smooth (you can also do this yourself in a bowl).

2.     Spread toast with lemon feta. Top with peas and zucchini. Sprinkle with lemon zest, herbs, salt and pepper.

3.     Enjoy!
