Coconut Lime Slice
Hello citrus heaven!
Did you know that.. citrus (limes, lemons, oranges etc) are abundant in winter?
This isn't by chance, these fruits are full of vitamin c to support immunity during these cooler months.
Eating seasonally ensures variety in food consumption, this variation of food will support nutrient requirements across the year.

Ingredients
Base
¼ cup Extra Virgin Coconut Oil, melted
¼ cup Maple Syrup
2 Free-Range Eggs, whisked
1 ¾ cup Almond Meal
½ tsp Baking Powder
Juice of ½ Lime
Zest of ½ Lime
Top
½ cup Shredded Unsweetened Coconut
Juice of ½ Lime
Zest of ½ Lime
Method
1. Preheat oven to 180 degrees conventional and prepare a 20 x 20cm baking tin.
2. Using a spoon combine all base ingredients in a bowl.
3. Spread mixture evenly into tin.
4. In a separate bowl, combine all topping ingredients and sprinkle evenly over base.
5. Bake for 18-20 minutes or until coconut is lightly browned.
