Pruffins “Protein Muffins”

This Vanilla & White Chocolate Muffins are seriously delicious and I’m sure will become a favourite of yours.

I'm super picky with protein powder, majority are fulll of nasty additives and artificial/natural “flavours” which are basically just chemical cocktails.

Here I am using Pure Vanilla Bean Protein Powder
from Aus Natural Protein Company.

 
Pruffins
 

Servings: 12 Muffins

Ingredients

2 Free-Range Eggs
1 cup Milk (I used Coconut Milk)
¼ cup Extra Virgin Coconut Oil, melted
½ tsp Vanilla Extract
2 cups Almond Meal
2/3 cup Pure Vanilla Bean Protein Powder
1/3 cup Coconut Sugar
1 tsp Baking Powder
½ cup Nuts (I used Pecans), roughly chopped
½ cup White Chocolate Chips, optional

Topping
Coconut Butter, melted
Lemon Rind, sprinkled

Method

1.     Preheat oven 160 degrees.

2.     Whisk eggs, milk, coconut oil and vanilla in a bowl until combined.

3.     Add almond meal, protein powder coconut sugar and baking powder, stirring to combine.

4.     Fold in nuts and optional chocolate chips.

5.     Divide mixture into a greased muffin tin.

6.     Bake for 20-25 minutes or until lightly browned.

7.     Drizzle with coconut butter and sprinkle with lemon rind.
