Vanilla Bean Protein & Pecan Cookies

Cookie galore! You're going to love these vanilla bean protein cookies, I drizzled mine with some coconut butter and which adds a delicious natural sweetness.

Adding protein into baked goods is a fantastic way to get it in and support your bodies recovery and systems!

 
 

Servings: 14 cookies approx.

Ingredients

1 cup Buckwheat Flour
1/3 cup Pure Vanilla Bean Protein Powder
¼ cup Coconut Sugar
1 tsp Baking Powder 
Pinch Salt
1 Free-Range Egg, whisked
125g (or ½ cup) Grass-Fed Butter, melted
1/3 cup Pecans, roughly chopped 
Coconut Butter, melted (optional)

 
 

Method

1.     Preheat oven to 180 degrees conventional and prepare a baking tray.

2.     Sift buckwheat, protein powder, sugar, baking powder and salt into a mixing bowl. 

3.     Pour in egg and butter and stir to combine.

4.     Fold through pecans. 

5.     Spoonful mixture on to baking tray in one tablespoon dollops. 

6.     Bake in oven for 10-12 minutes until browned on top.

7.     Allow to cool on tray for a further 5 minutes.

8.     Drizzle with coconut butter and enjoy!
