Chocolate Protein & Peanut Butter Fudge

 

hello fudgey dreams.
I never used to like the combo of chocolate & peanut butter together, but I have since realised this is because what I was tasting wasn’t actually real chocolate nor peanut butter. This recipe uses REAL ingredients and I am pretty much now obsessed with this combo! Just goes to show the power of good quality food.

CHOCOLATE PROTEIN & PEANUT BUTTER FUDGE

Servings: 12

Ingredients

1 cup Peanut Butter
2/3 cup Artisan Cacao Protein Powder
1/3 cup Rice Malt Syrup
½ tsp Vanilla Extract

Topping:
½ Dark Chocolate, broken into bits
1 tbsp Coconut Oil

Choc & Pb Fudge

Method

1.     Combine peanut butter, protein powder, rice malt syrup and vanilla in a large bowl (you may need to use your hands as the mixture will become thick and fudgey). 

2.     Press into a lined container.

3.     Meanwhile, melt chocolate and coconut oil in a small saucepan. 

4.     Pour chocolate over fudge and refrigerate for at least 30 minutes or until chocolate has set (to speed up this process use the freezer instead. 

5.     Proceed to cut into squares and keep refrigerated.
