Coconut French Toast
I never used to be one for french toast,
but after tasting coconut french toast whilst I was in Japan I was sold.
It takes french toast to the next level. That coconuty taste is simply delicious,
topped with fruit, doesn’t get much better than that!

Ingredients
1 slice Bread (preferably good quality Gluten Free or Sourdough)
1 Free-Range Egg, whisked
1 tbsp Unsweetened Coconut Milk
¼ tsp Vanilla Extract
2 tsp Desiccated Coconut
1 tsp Grass-Fed Butter
Toppings:
1/3 cup Seasonal Fruit (I used banana, strawberries &
blueberries)
1 tbsp Coconut Flakes
Sprinkle of Cinnamon
Drizzle of Maple Syrup (if desired)
Method
1. Combine egg, milk, desiccated coconut & vanilla in a in a flat based bowl.
2. Soak bread in egg mixture for approximately 5 minutes, flipping to soak other side at the halfway point.
3. Melt butter in a small frying pan on a medium heat.
4. Gently place bread in pan and cook for 1 ½ minutes and flip for a further 1 ½ minutes or until browned.
5. Serve with toppings.
