Miso Baked Salmon

This Miso Baked Salmon is super quick to whip up, full of flavour and sure to be a family favourite.
Servings: 2
Ingredients
2 x 150g Wild Salmon Fillets, skin on
½ Red Onion, cut into quatres
½ Broccoli, cut into florets
1 Carrot, cut into 1 cm thick coins
1 Large Potato, cubed
Extra Virgin Olive Oil, drizzled
Salt & Pepper, to taste
2/3 cup Brown Rice, cooked
Fresh Parsley, to serve
Miso Paste:
2 Garlic Cloves, minced
½ Lime, juiced
¼ cup Tamari
2 tbsp Honey
1 tbsp Miso Paste
2 tsp Sesame Seeds
½ tsp Chili Flakes, optional
Method
1. Preheat oven to 180 degrees and prepare a baking dish.
2. Combine miso paste ingredients in a shallow dish. Place salmon in dish and coat with paste.
3. Place potato and carrots in baking dish and lightly drizzle with oil, bake for 10 minutes.
4. Add remaining vegetables, drizzle with oil and season with salt and pepper. Place salmon on top of vegetables and pour any leftover paste on top of the salmon. Bake for 15-20 minutes or until vegetables are tender.
5. Serve vegetables and salmon with a side of rice. Garnish with fresh herbs.
