Mushroom & Onion Pork Loin Steaks
When I think of a cozy, home cooked, comfort meal, this is what I think of!! This recipe is full of all the things you crave on a winters day.
Using Butcher Crowd’s Pork Loin Steaks, with an onion and mushroom sauce, this recipe is the perfect combo for whenever you’re next craving something warm and DELISH!

Ingredients
1 tbsp Extra Virgin Olive Oil
2 x Pork Loin Steaks
4 stalks Broccolini, halved
1 handful Spinach
2 tbsp Parsley, roughly chopped
Rice, optional serving side
Mushroom & Onion Sauce
½ Onion, sliced
1 Garlic Clove, minced
2 cups Button Mushrooms, sliced
¾ cup Coconut Cream
2 tbsp Passata, optional (makes flavour richer)
1 tsp Tapioca
Salt & Pepper, to taste
Method
Heat half the oil in a medium frying pan and cook pork steaks until browned on each side and just cooked through. Set aside.
Meanwhile, heat remaining oil in a medium saucepan. Sauté onion & garlic until softened.
Add mushrooms and cook for two minutes. Add coconut cream, passata and broccolini and cook for a further 2 minutes.
Add tapioca and seasonings to mushroom sauce and stir until thickens, approximately a further 2 minutes.
Add pork and spinach to the saucepan and cook until spinach has wilted.
Serve topped with parsley and optional rice.
