Roasted Sticky Carrots & Grilled Goats Cheese
A delicious addition to any dinner!

Servings: As a Side Dish
Ingredients
250g Snackable Carrots
1 tsp Paprika
Extra Virgin Olive Oil, drizzled
100g Goats Cheese
1 Chilli, sliced
2 tbsp Honey, drizzled
Sea Salt, sprinkled
Fresh Parsley, roughly chopped
2 tbsp Pistachio, roughly chopped
Method
1. Preheat oven to 200 degrees fan forced and prepare a baking dish.
2. Add the carrots and paprika to a baking dish and drizzle with olive oil. Bake for 15 minutes.
3. Add goats cheese and chilli to the baking tray and cook for a further 5-10 minutes (but keep an eye on the chilli in case it burns).
4. Drizzle with honey. Serve sprinkled with salt, parsley and pistachios.
