Satay Beef Rice Paper Rolls
Rice paper rolls are one of my favourite things to make at home! They are so versatile, you can fill them so so many delish combos, but this one is certainly one of the best!
Using Butcher Crowd’s grass-fed diced beef with satay sauce, this is a combo to die for!
Servings: 2, makes 8 rolls
Ingredients
Rice Paper Rolls
1 tsp Extra Virgin Olive Oil
8 Rice Paper Rounds
300g Grass-Fed Diced Beef
1 cup Mixed Salad Leaves
1 Carrot, julienned
½ Cucumber, peeled
2 tbsp Mint, finely chopped
Satay Sauce
2 tbsp Peanut Butter
2 tbsp Milk (I used Almond Milk)
1 tbsp Tamari
1 Garlic Clove, minced
½ Lime, juice & zest
Method
Heat oil in a medium frying pan on a medium heat. Add beef and cook until tender.
Prepare rice paper as per packet instructions, placing beef and filling ingredients, roll and set aside.
Combine satay sauce in a bowl (add more water or peanut butter for your desired consistency).
Serve rolls alongside satay sauce.
