Zucchini Fritters with Hommus Dipping Sauce

I love how easy and nutritious fritters are, particularly when they use seasonal vegetables like these ones.

This is also accompanied with a delicious dipping sauce with hommus from @sssfoods

 
Zucchini Fritters with Hommus Dipping Sauce
 

Servings: 4 (10 Fritters)

Ingredients

1 x 400g can Cannellini Beans, drained & rinsed
1 Free-Range Egg
½ cup Brown Rice Flour
1 Garlic Clove, minced
¼ tsp Baking Powder
1 tsp Italian Herbs
1 tsp Salt
Pepper, to taste
1 large Zucchini, grated & juice squeezed out through a tea towel
1 Spring Onion, diced
1 tsp Extra Virgin Coconut Oil

Dressing:
1 Lime, juice & zest
1 x 225g SSS Foods Hommus - Natural

Serving suggestion:
Side Salad

Method

1.     Blitz beans, egg, flour, garlic, baking powder, Italian herbs, salt & pepper until combined.

2.     Mix through zucchini and spring onion.

3.     Heat oil in a large frying pan on a medium heat.

4.     Using 1 heaped tablespoon of batter, cook fritters until golden, approximately 3 minutes each side.

5.     Meanwhile, combine lime and hommus in a small bowl and set aside.

6.     Serve fritters, drizzled with dipping sauce and alongside a salad.
