Clean Chicken Parma
What a classic! How can you go wrong with a parma!
I like to call this my clean chicken parma… I use almond meal to replace breadcrumbs, fresh tomatoes and top it with beautiful goats feta cheese. They are such great substitutes, far less processed.
On the side… we have yummy sweet potato and extra veg.
SO delicious and a well-rounded meal.

Ingredients
2 x 100grams Free-Range Chicken thigh
1 Free-Range Egg
½ cup Almond Meal
1 Tomato, diced
30g Goats Fetta (1 heaped tbsp)
1 Zucchini, sliced
1 cup Sweet Potato, cubed
1 tbsp Extra Virgin Coconut Oil
Salt & Pepper, to taste
Method
1. Beat egg in small bowl. Set aside another bowl with almond meal.
2. Coat chicken in egg and then coat in almond meal.
3. Place crumbed chicken in fridge until ready to pan fry.
4. Drizzle oil over sweet potato on baking tray and season with salt & pepper.
Bake 180 degrees fan forced for 20-25 minutes.
5. Add zucchini to the same baking tray after 10 minutes of cooking the sweet potato.
6. Panfry prepared chicken in coconut oil for 10-12 minutes.
7. Sauté tomato in a separate pan with salt and pepper until soft.
8. Top chicken with tomato and feta.
Bake in oven for 5 minutes or until cheese softens.
9. Enjoy.
